Add to cooked pasta, garnish with a handful of basil and dinner is done. I’ve been making tomato salads almost every evening, and I have to admit I’ve grown weary of my olive-oil-salt-basil minimalism. Kay Chun’s Thai-style crunchy vegetable salad, with its dressing of fish sauce and lime, turns out to be the perfect antidote. Peak summer is also peak slow cooker. It’s fancier, richer and less sweet than American icebox cakes, though you’re permitted to skip the chocolate curls on top.

Bimbo cut its annual sales forecast to low-to-mid single-digit growth, Chief Financial Officer Diego Gaxiola said in a call with analysts, down from a previous projection of mid-to-high single-digit growth. "Compared to our initial sales guidance, we have an impact of more than six percentage points" due to the strength of the peso, Gaxiola said. Earlier on Tuesday the firm, which sells buns, cakes, cookies, bagels and tortillas across 34 countries, reported that revenues increased 4% to a second-quarter record of 100.37 billion pesos ($5.86 billion) following price hikes, which were also offset by the peso's strength. The strong peso also partially contributed to a nearly 30% drop in quarterly net profit, falling to 4.30 billion pesos, Bimbo said. Adjusted earnings before interest, tax, depreciation and amortization (EBITDA) for the quarter rose 7.8% to 14.00 billion pesos.

This Hummus Holds Up After 800 Years
  + stars: | 2023-07-26 | by ( Ligaya Mishan | ) www.nytimes.com   time to read: +2 min
You take chickpeas, hard and dry, and boil them until their skins loosen and they reveal themselves, tender little hulks with souls of butter. For much of human civilization, recipes were rarely written down, and of those that were, almost none have survived. You might recognize this as hummus. Notably absent from the recipe is garlic, despite its ubiquity in the cooking of the Arab world at the time. It’s not certain exactly when garlic was introduced to the dish: Nasrallah notes that there is no documentation of hummus recipes after the 14th century until the late 19th century.

REUTERS/Kim Kyung-HoonTOKYO, July 26 (Reuters) - On a recent vacation in Tokyo, Takumi Yamamoto opted for a special lunch of cricket curry and silkworm sashimi, washed down with a water bug cider. In particular, the water bug cider was quite refreshing and delicious, like a green apple." While some consumers think eating insects is just gross, Japan has a rich culinary history of insects as food. The delicate "sashimi" is the left-over casing of silkworms, and the cider is infused with water bug extract and topped with a whole insect, said to taste like shrimp.

Make any recipe more than three or four times and you’re going to change it, either for reasons of taste or expediency, occasionally both. Make that recipe six or seven times and it’s altered forever. That’s where I am with Eric Kim’s recipe for gochujang buttered noodles (above). Make Eric’s dish as he intended, or take it in whatever direction your pantry allows and your taste desires. It’s just butter, garlic, spice, sweetness, umami and starch.

The three types were glutinous rice, medium grain rice and jasmine rice. In this study, glutinous rice was the stickiest, while medium grain rice and jasmine rice were less sticky, and also harder as tested in the laboratory. Washing rice will have no effect on the bacterial content of the cooked rice, as high cooking temperatures will kill all bacteria present. What is more concerning is how long you store cooked rice or washed rice at room temperature. If wet rice or cooked rice is kept at room temperature, this can activate the bacterial spores and they begin to grow.

When Did the U.S. Become a Democracy?
  + stars: | 2023-07-05 | by ( Amanda Taub | ) www.nytimes.com   time to read: +1 min
How old were you when the United States became a democracy? The big story of the United States is that it’s always been a democracy — that democracy was the whole point of overthrowing British rule. I’m guessing most other people who grew up in the United States probably learned it too. But these days, if you speak to many experts on American history or political science, you’ll often hear something very different. “As a person who studies autocracy, there’s no way I would code the U.S. as a democracy prior to 1965, before the passing of the Voting Rights Act,” Anne Meng, a University of Virginia political scientist, told me in January.

The James Beard Foundation presented its coveted culinary awards for 2023 in Chicago on Monday night, with the top awards going to Rob Rubba of Oyster Oyster in Washington, D.C., as outstanding chef and to Friday Saturday Sunday in Philadelphia as outstanding restaurant. Reflecting the awards’ growing clout, Mayor Brandon Johnson of Chicago and Gov. J.B. Pritzker of Illinois appeared live onstage, and Secretary of State Antony Blinken, in a video, praised the soft power of culinary diplomacy, citing the Beard-award-winning chef Edward Lee’s Maryland crab cakes with gochujang vinaigrette, which were served at a recent state dinner. In some ways, the gala was the eye in a recent storm of controversies about the group’s process and priorities. After an internal audit, the awards process was retooled to reward not only culinary excellence, but equity, leadership, sustainability and community-building.

Yes, You Can Make a Wedding Cake
  + stars: | 2023-06-02 | by ( Natasha Pickowicz | ) www.nytimes.com   time to read: 1 min
Ever scroll through a friend’s wedding registry and feel uninspired by the cavalcade of appliances and trinkets? Consider going rogue and asking the couple if you can give them something major: a wedding cake. With their vertiginous tiers, sculpted sugar roses and fondant as smooth as clay, professional wedding cakes are engineered to look good for long stretches of time — some even come with a sneaky Styrofoam layer — but they can fall short in flavor. A more personal homemade cake subverts expectations, and can feel less formal in the best possible way: big, exuberant and celebratory.

The average cost of a wedding, nationally, this year is $29,000, up $1,000 from 2022, according to online wedding planning site Zola. It said searches for alternative weddings – especially underwater weddings – have jumped 305% on its platform. “Though slightly challenging logistically, it should be interesting to see the data for underwater weddings in 2023,” she said. “Wedding photographer Kimber Greenwood, who specializes in underwater wedding photography, is booked to photograph 20 of them this year. The wedding industry should enjoy the recovery, because it may not last.

As life in China returns to normal after the pandemic, hawkers are hitting the streets. They look to at least supplement their income amid an uneven economic recovery in which jobs and wage growth has been sluggish. For decades, street stalls and hawkers - common elsewhere in Asia - have been banned or tightly regulated in many Chinese cities, with authorities seeing them as unsightly. The tech hub of Shenzhen, which banned hawking in 1999, will ease restrictions on street stalls from September. Lanzhou in the northwest said this month it would designate areas for street stalls as it sought to encourage innovation and entrepreneurship.
The wedding industry is beginning to see the fallout of this shift away from tradition. That meant "wedding TikTok" — with its dancing groomsmen and videographers turned influencers — was the next best thing. "So it is time for us in the wedding industry to expand the definition of what a perfect day means." Adrienna McDermott spent nine years in the wedding industry before starting a marketing agency for wedding professionals called Ava and the Bee. "It really opened up my eyes for the power of TikTok," Lee said.

"There's clearly a lack of real strategy and it's not enough to just say we're going to cut costs. Vodafone Group Plc (VOD.L) earlier this week said it would cut 11,000 jobs globally over three years after it warned that a poor performance in its biggest market Germany would hit cash flow. The blue-chip FTSE 100 (.FTSE) rose 0.6%, reflecting an upbeat mood in global markets on hopes that Washington is edging closer to a deal to raise the U.S. debt ceiling and avert a default. Among other movers, luxury group Burberry Group Plc (BRBY.L) fell 6.2% as continued weakness in the United States overshadowed a stronger-than-expected fourth quarter sales driven by a rebound in China. EasyJet Plc rose 1% after the airline posted a first-half loss in line with its guidance.
