There has been a barrage of bad news about food lately. Ten people died after eating Boar’s Head deli meat in a listeria outbreak that hospitalized dozens of others. This month, there has been a food recall nearly every day. But a closer examination of data on foodborne illnesses and food recalls shows a more complicated picture. “I won’t say the food supply is getting less safe, but it’s not getting safer either,” said Donald Schaffner, a professor of food science at Rutgers University.

Sadly, many individuals resort to easy-to-prepare and tasty ultra-processed foods that are loaded with salt, sugar and fats and that lack essential nutrients. Consumption of ultra-processed foods is associated with obesity, as the article points out. We know what constitutes a healthy diet that helps to enable those who consume it from becoming overweight. But the only way to match such a diet is to prepare healthy, accessible and affordable meals at home. Without more emphasis on home cooking, obesity rates will continue to soar.
