CNN —Vegetables are great not only for their versatility — they can be eaten raw or cooked, whole or chopped — but also for their health benefits. Eating three servings of baby carrots a week can give a significant boost of important nutrients found in the orange root vegetables, according to a new unpublished study presented June 30 in Chicago at Nutrition 2024, the annual meeting of the American Society for Nutrition. After four weeks, the researchers found those who ate the carrots had a 10.8% increase in carotenoids in their skin, natural antioxidants found to have health benefits, such as preventing inflammation and promoting heart health, according to the Cleveland Clinic. But those who consumed the carrots and the supplement saw the most benefits and increased their skin carotenoids by 21.6%. Eating vegetables can protect against heart disease, some cancers, diabetes and obesity, according to the CDC.

"Consensys violated the federal securities laws by failing to register as a broker and failing to register the offer and sale of certain securities," the court filing alleges. In April, Consensys, which provides blockchain software, tried to preempt the SEC's action with its own lawsuit, alleging overreach on the part of the regulator. The 10-year-old company said its suit followed three subpoenas issued last year, plus a Wells notice from the SEC that claimed Consensys was violating federal securities laws. Consensys said in an emailed statement Friday that the action is part of an "anti-crypto agenda" at the SEC.

Tokyo/Hong Kong CNN —A Japanese woman and her child were among three people stabbed by a man on Monday in front of a school bus at a bus stop in eastern China, according to Japanese authorities. In Suzhou, the attack took place Monday afternoon as the mother waited to pick up her child at a bus stop near a Japanese school, according to the Japanese official. The school bus is from the Suzhou Japanese School, located less than a mile from the bus stop in an area where many Japanese nationals live, NHK said. Opened in 2005, the Suzhou Japanese School offers six-year elementary school and three-year junior high school curriculums, according to its website. Its rules state that students must be picked up by a parent or guardian from the school bus.

Almost 72 million people across the country were under warnings of extreme heat Monday morning, the National Weather Service said. With Thursday's seasonal solstice taking place amid a weeklong heat wave expected for the East Coast and the Midwest, the summer of 2024 is coming in hot. Extreme heat warnings were in place for Chicago, St. Louis, Indianapolis, Detroit, Cleveland, Cincinnati, Pittsburgh, Philadelphia, Boston, New York City and Albany, New York. The weather service office for Pittsburgh said it "could be the most impactful heat wave of the 21st century." The weather service is also on the lookout for any possible tropical storms developing in the Gulf, it said.
