Nuts, beans, and dried herbs are crucial but so is a quality Greek extra virgin olive oil, she says. "I think there's pretty high awareness of the Greek diet as being one of the healthiest in the world," the chef told Business Insider. AdvertisementThe chef emphasizes that you should always have quality extra-virgin Greek olive oil at hand. When she eats fish, she often buys fresh or makes her own cured fish using anchovies, salt, vinegar, and olive oil. I left the US to start over and I've spent the past few months falling love with Istanbul. The city is stunning and bustling — and I find that my American dollars go far here. For example, I'm living in a digital-nomad hotel in Kadikoy, one of the hippest neighborhoods on the Asian side, right by the water. I'm able to save money each month, which I always found challenging to do while living in NYC. I've had chestnuts, corn, and mussels stuffed with spiced rice and topped with fresh lemon juice for just a few dollars.

Sign up for CNN’s Eat, But Better: Mediterranean Style newsletter, an eight-part series that guides you in an expert-backed eating lifestyle that’s good for your health. Nuts contain dietary fiber, plant-based protein, vitamin E and potassium, calcium and magnesium. And to reap the most benefits, it’s key to make eating nuts a habit over the long haul. “Many healthy eating patterns, such as the renowned Mediterranean diet, include nuts on a regular basis in the diet,’’ Palmer said. Think outside the bowlIt’s easy to snack on nuts as part of a healthy lifestyle, but I also use nuts in many recipes.

Political Cartoons View All 1190 ImagesFor years, California didn't regulate groundwater, allowing farmers and residents alike to drill wells and take what they needed. There is a small market, hardware store, a Western-themed boutique hotel and miles of land sown with olives, pistachios, grapes and carrots. From the start, Grimmway and Bolthouse participated in the formation of the local groundwater sustainability agency and plan. Furstenfeld, who sits on an advisory committee to the groundwater agency, doesn’t own land and doesn’t have an attorney. The company that owns the land, Bolthouse Land Co., is still litigating.

This Hummus Holds Up After 800 Years
  + stars: | 2023-07-26 | by ( Ligaya Mishan | ) www.nytimes.com   time to read: +2 min
You take chickpeas, hard and dry, and boil them until their skins loosen and they reveal themselves, tender little hulks with souls of butter. For much of human civilization, recipes were rarely written down, and of those that were, almost none have survived. You might recognize this as hummus. Notably absent from the recipe is garlic, despite its ubiquity in the cooking of the Arab world at the time. It’s not certain exactly when garlic was introduced to the dish: Nasrallah notes that there is no documentation of hummus recipes after the 14th century until the late 19th century.

Her mother Sarah — a former deli shop owner — was bored with retirement and had decided to open an ice cream shop in Bethesda, Maryland. "To be honest, at first I was like, 'ice cream shop?'" Running the ice cream shopDespite Sarah's Handmade Ice Cream successful grand opening, it took over six months for the business to become "a well-oiled machine," Park says. Instead, Park and her mother donate ice cream to local nonprofits and community organizations, which has attracted loyal customers in the Bethesda area. Within a few months of opening the first store, Park realized the business didn't have to be limited to just "a mom-and-daughter shop."
The Great C.S.A. Dilemma

For those equally frustrated by supermarket markups and interested in supporting local farmers, a C.S.A., or community-supported agriculture program, has a lot to offer. When I recently asked for your recipe quandaries, several of you wrote in to express your admiration for your C.S.A. A bevy of beetsBorscht — served warm or chilled — is an obvious option for a reason (it’s a perfect soup). David Tanis’s even simpler soup of puréed beets garnished with tarragon and chives elegantly makes use of this sturdy root vegetable. But if you’re borscht’d out, pair roasted beets with creamy yogurt and fragrant coriander.
David Swanson | ReutersPeople have worked for a century to make California's Tulare Basin into a food grower's paradise. The Tulare Basin is at the southern end of California's San Joaquin Valley — and in essence, it's a massive bowl. Before irrigators dug canals and rerouted water for farming in the late 1800s, Tulare Lake filled the bowl's lower reaches. Today, the irrigation system is designed to "use every single drop of water" that flows into the basin, Mount said. Tulare Lake refilled in 1997 and 1983 during very wet seasons.

Terra Nova's basins are filled with 1.5 to 3.5 feet of water, Cameron said Wednesday. California Governor Gavin Newsom signed an executive order on March 10 making it easier for farmers to divert floodwaters onto their lands until June. "We're at the beginning of a lot of momentum for groundwater recharge programs," said Gosselin, of the state groundwater office.

NABLUS, West Bank—Almost anywhere you go here, pastry aficionados are at odds: Who makes the best knafeh? Knafeh is a warm, salty-sweet dessert usually made from melted cheese and pastry dough, with a sugary syrup poured over the top and a sprinkle of chopped pistachios. It is a cultural touchstone for Palestinian identity and a calorie bomb for Tel Aviv hipsters with late-night munchies.

After that, I worked in a pastry shop in which meringues were multifunctioning as treats for sale as well as window decoration. Round meringues, each the size of a small fist, sprinkled with flaked almonds and piled up to heights where no other cake would be safely placed. Meringues’ natural sturdiness means they can be plucked from a distance with long tongs with little risk of breakage. These meringues are fully cooked in the middle, which allows you to break them up and mix them with whipped cream or ice cream, or even both. To the egg whites and sugar, a small amount of vinegar and some cornstarch are normally added.
