When rinsing chicken, bacteria such as salmonella can be transferred via the water to your kitchen surfaces, leading to potential cross contamination of other ingredients. Bacteria was found in the sinks of 60% of cooks who rinsed raw chicken as part of a 2019 USDA study. “Use paper towels, even more than you think you need,” Matijevich said, and pat the chicken dry or let the paper towels soak up the excess liquid. If they are used to clean up raw poultry juice, they should also go in the dishwasher on the sanitize cycle,” Schaffner said.

Brazil is experiencing an enormous outbreak of dengue fever, the sometimes fatal mosquito-borne disease, and public health experts say it is a harbinger of a coming surge in cases in the Americas, including Puerto Rico. Brazil’s Health Ministry warns that it expects more than 4.2 million cases this year, outstripping the 4.1 million cases the Pan-American Health Organization recorded for all 42 countries in the region last year. The Knicks sent Quentin Grimes, Evan Fournier, Malachi Flynn, Ryan Arcidiacono and two second-round picks to the Pistons in the deal before the NBA's trade deadline. Clyde Taylor, a scholar who in the 1970s and ’80s played a leading role in identifying, defining and elevating Black cinema as an art form, died on Jan. 24 at his home in Los Angeles. His daughter, Rahdi Taylor, a filmmaker, said the cause was chronic obstructive pulmonary disease. As a young professor in the Los Angeles area in the late 1960s — first at California State University, Long Beach, and then at the University of California, Los Angeles — Dr. Taylor was at the epicenter of a push to bring the study of Black culture into academia. Black culture was not merely an appendage to white culture, he argued, but had its own logic, history and dynamics that grew out of the Black Power and Pan-African movements.
