During pandemic-induced downtime, Mr. Campbell and Ms. Burke added a fourth room to the hotel, which they believe is the biggest they can become while still staying true to their ideal of a hotel run completely hands-on, by them. They have also added multiday chef-driven experiences to replace the one-night pop-up dinners they previously hosted. Breac House visitors can now meet guest chefs not just for a few words after dinner, but over the course of three days, visiting nearby farms together, eating meals and sharing drinks. (The cost for two nights lodging and breakfast, as well as two dinners and excursions, is 2,950 euros for two.) Breac House’s success, so evident at this meal, presents a perhaps unsolvable dilemma: How to provide this level of engagement and intimacy to the many more guests who want it, without compromising the essence of what a place like Breac House has created.

Caviar Gets Even More Refined
  + stars: | 2023-08-08 | by ( ) www.nytimes.com   time to read: +2 min
So it’s perhaps no surprise that chefs are turning their attention to something more rarefied than your everyday osetra: albino caviar, which ranges in color from alabaster to golden, and is the result of uncommon mutations. The most sought after is that of the beluga sturgeon but, says Hermes Gehnen, the founder of N25 Caviar, an international purveyor, “restaurants generally can’t afford it. Although white caviar stock is limited, they aren’t the only pale orbs worth chasing. Snail eggs, which have a mushroomlike flavor, have the same visual appeal despite their earthy taste. “Sometimes,” says Munk, “you’ll pay even more money for snail eggs than you do for caviar.” — Lauren JosephThe Thing: Jewel-Toned Glass Lamps From Hermès

Cooking videos have never been more persuasive, more inescapable, more addictive, more entertaining. How Cooking Videos Took Over The WorldVideos on TikTok with the #foodtok hashtag have been viewed more than 64 billion times. That is what makes these videos so engaging.”Today, there isn’t just one way to make a successful cooking video. But the evolution of cooking videos represents a broader shift: Algorithms and artificial intelligence increasingly drive everyday behaviors and can stifle creativity.

RIGHT IN the heart of Jerusalem’s Old City lies the centuries-old Suq El-Attarine, or spice merchants’ market. Whether you head there by descending the stairs past Damascus Gate or navigating the labyrinth of stone-lined alleyways from the Holy Sepulchre, the aroma of this narrow marketplace is inescapable. Through domes punctuated with apertures for light and ventilation, the sun often dances upon the vivid goods on display. At first glance, the spice heaps shimmer like a collection of precious gemstones, an analogy that isn’t far from historical reality. Once, spices were indeed worth more than gold.

A Florida steakhouse chain is joining the fray by selling a $69 plant-based steak by Chunk Foods. Charley's Steak House is billing itself as the first steakhouse chain in the US to add a plant-based steak to its menu. The plant-based steak is so good that some staffers were fooled during blind taste tests, company Executive Vice President Clark Woodsby told Insider. Last year, Beyond Meat's sales slumped as consumers turned away from plant-based meat substitutes. To date, restaurant diners have experienced plant-based foods at fast-food chains like KFC, Pizza Hut, McDonald's, and Chipotle.

Best Gifts for the Tea Lovers in Your Life

For masterful measuringOMABETA Portable Kitchen Tea Scale $16 at AmazonAs with baking, you will get best results when measuring tea leaves by weight rather than the spoonful. “Some teas are tightly rolled while others are fluffy and light,” explains Ben Marcus-Willers, of Red Blossom Tea Company, a San Francisco-based tea company that sells to consumers as well as Michelin three-star chefs. Desains suggests a porcelain tea pot clad in stainless steel to keep a quality tea warm for hours. Alternately, make a tea concentrate by doubling the amount of tea leaves in hot tea, then pouring it over ice. Tea will always taste best fresh and warm, and its taste will change—“often for the worse,” Kroesen notes—as it cools.

Since then, I've worked on 20 different superyachts in Asia, in the Caribbean, and in the Mediterranean. The yachts I've worked on have personal submarines, helipads, and spas. Dinner reservations can fall through, or once they get to the restaurant, the yacht owners may decide the vibes are off and that they no longer want to eat there. But I don't just cook for the owners, the guests, and the crew — sometimes, I cook for the owner's pets. I get my jobs through word of mouth, but to help people who are starting out to connect with other yacht chefs, I launched thesuperyachtchef.com in 2019.

The majority went to a security company owned by Mr. Aven’s financial manager, who has been under investigation for potentially helping Mr. Aven evade sanctions, court records show. That is all,” said Mr. Aven, reached by phone in the Hamptons. The British Treasury granted at least 82 licenses last year and many more applications are pending, according to official figures seen by The New York Times. Treasury officials allowed Mr. Aven, for example, to spend more than £1 million while technically cut off from the British economy. At the same time, law enforcement officers investigated him for possible sanctions evasion and raided his countryside mansion last year.

But many of them are allowed to spend a fortune on living expenses, The New York Times reported. One tycoon had permission to pay 19 members of staff, including private chefs, the report said. Last year, officials granted at least 82 exemptions — known as licenses — to oligarchs who were affected by UK sanctions imposed as a result of Russia's invasion of Ukraine, the report said. A big chunk of that money went into a security company that has been under investigation for likely helping Aven evade sanctions, The Times reported, citing court records. A spokesperson for the UK Treasury told The Times that licenses to allow payments for "basic needs" are "strictly monitored."

A taste of cookie heaven? Lisbon pastry shop marks pope's visit

REUTERS/Pedro NunesLISBON, July 26 (Reuters) - As Lisbon gears up for a long visit by Pope Francis next week, a local pastry shop has rolled out a brand-new treat to mark the occasion: a cookie with the pontiff's picture on it that is already selling fast. The idea began as an in-house joke between one of the owners of Balcao do Marques, Fernando Santos, and his pastry chefs. The city-centre pastry shop is close to one of the venues where Francis will attend World Youth Day, a global gathering of young Catholics that runs from Aug. 1-6. Their design features an edible printed image of the pope set on a home-made cookie decorated with icing and coloured sugar sprinkles.

The comebacks have received euphoric reviews, but they are occurring at a starkly different moment for British pop music, compared with the ’90s. In 1996 Newsweek declared London the world’s coolest city. Instead, news articles about the country’s music scene are more likely to touch on venues shuttering — at a rate of one a week this year, according to the nonprofit Music Venue Trust — or the country’s bands, DJs and rappers struggling to tour abroad after Brexit brought in a tangle of red tape. Local news outlets have also lamented the British government’s cuts to arts funding, and warned about the decline of music teaching in schools. Sitting in his West London recording studio recently, Albarn said some things hadn’t changed since Britpop’s heyday.

As their pots emptied, they made more stew. Annie Rauwerda, 23, started cooking a vegan stew in a slow cooker on June 7 and — with the help of her boyfriend, David Shayne, 27, and a close friend, Hajin Yoo, 23 — hasn’t stopped since. It’s a perpetual stew; Ms. Rauwerda and her friends eat most of it, leaving just a small amount of broth and other ingredients in the pot before they replenish it. They have repeated that cycle for over a month now, stirring an online buzz along the way.

[1/2] A view shows a cooked piece of cultivated chicken breast created at the Upside Foods plant, where lab-grown meat is cultivated, in Emeryville, California, U.S. January 11, 2023. Difficulty competing with conventional meat on price has plagued the plant-based meat sector, which has failed to meet market share expectations. To be price competitive, cultivated meat must reach a production cost of $2.92 per pound, Goncalves said. Last year, governments spent about $635 million on alternative proteins, about $167 million of which was for cultivated meat, according to the group. China Chilcano's chefs said the product behaved very similarly to conventional chicken and offered some improvements, like rapid absorption of marinades.

In Stockholm, it was the cookies — the black sesame, wasabi and white chocolate, or maybe the gluten-free coconut almond dark chocolate — that signaled to Beyoncé’s dancers, crew and roadies that Grant Bird was back. Mr. Bird is an English pastry chef and one of 14 culinary professionals on Beyoncé’s current Renaissance World Tour, which has also employed a vegan chef and three personal chefs just for Queen B and her inner circle. After getting Covid during rehearsals in Paris, Mr. Bird had to take a weeklong break, leaving the dessert duties for the 400 to 600 crew members to two substitute chefs. By then, the crew had gotten used to his lavish desserts, which often featured a dozen different offerings at both lunch and dinner. A pared-down sweets menu spoke to his absence.
