CNN —Chipotle customers have complained that portion sizes are all over the map. Frustrated Chipotle customers took to posting on social media this year, accusing the company of skimping on servings. He added that about 10% of stores were outliers in portion sizes and would be re-trained. Chipotle employees were never directed to serve customers less, Niccol said, but the claims prompted a reevaluation of the entire system. He said there’s a been a noticeable shift from previous unhappiness and customers are “really excited” about Chipotle’s new portion sizes.

It was a remarkable moment in the annals of food, perhaps even humanity: A store in Singapore started selling lab-grown meat directly to the general public in May. “I like eating meat, and if I can do it without animal cruelty, it’s ideal,” he said. Others were not so enthused about meat cultivated in a lab. In recent years, Singapore has emerged as a hub for this utopian, or some might say, dystopian, future. It has looked at urban and vertical agriculture, approved insects for human consumption and given generous subsidies to cultivated meat startups.

New York CNN —Customers on social media have been furious with Chipotle for allegedly skimping on its burrito bowl portions this year. “First, there was never a directive to provide less to our customers,” CEO Brian Niccol said during an earnings call Wednesday. In June, a Wells Fargo analyst ordered and weighed 75 Chipotle burrito bowls with white rice, black beans, chicken, pico de gallo, cheese and lettuce across eight Chipotle locations in New York City. The bowls weighed roughly the same for in-store orders and online orders, but some locations served bowls that weighed 33% more than other locations. Some burrito bowls went to extremes, with one topping out at 27 ounces in one location, and a meager 14 ounces in another.

Gerardo Medina runs the Taquería Los Amigos, a 24-hour stand that sits at a busy intersection in an upscale neighborhood in Mexico City. Good morning. Eric Kim had that opportunity recently at the restaurant Ensenada in Brooklyn, with the chef Luis Herrera. He wrote about it this week for The Times, and gave us an adaptation of Herrera’s recipe for fish tacos al pastor (above), which is our meal for this evening. It’s pretty cool — grilled fillets of buttery white-fleshed fish standing in for the more traditional pork, everything stained delicious with a complex, brick-red adobo, and served with pineapple pico de gallo and plenty of warm corn tortillas. The resulting mixture gives a warmth and complexity — a “Hmm, what is that?” — to an otherwise breezy al pastor. When he first opened Ensenada, Herrera used pale out-of-season tomatoes that diluted the bright coastal flavors he wanted to showcase in these fish tacos. But it’s not just the pineapple that makes this fish al pastor — it’s the char. Al pastor, “in the style of a shepherd,” is a method of barbecuing meat on a rotating vertical spit that Lebanese immigrants brought to Mexico in the late 19th century.
