Gerardo Medina runs the Taquería Los Amigos, a 24-hour stand that sits at a busy intersection in an upscale neighborhood in Mexico City. With more customers from abroad eating his tacos, he began noticing similar reactions to his pico de gallo: red faces, sweat, complaints about the spiciness. So Mr. Medina, 30, got rid of the serrano peppers, leaving just tomatoes, onions and cilantro. While he still offers an avocado salsa with serrano and a red salsa with morita chiles and chiles de árbol, he wanted to provide a non-spicy option for international visitors unaccustomed to intense heat.

CNN —The Oscars of the food world — the James Beard Awards — were handed out Monday night to many chefs and restaurants reflecting cultures and regions that have long been overlooked when honoring culinary achievement in the United States. Outstanding Chef winner Michael Rafidi dedicated his award to Palestinian people all over the world in his acceptance speech. The 2024 winners bring heritage from all over the globe — the Philippines, Mexico, Japan, Peru, Vietnam, Senegal — to tables across the United States. This year’s awards also bring recognition to restaurants in many smaller towns and states that have not historically been recognized with James Beard Awards. Over a week ago, Taquería El Califa de León was simply one of Mexico City’s nearly 11,000 registered taco shops, though there are undoubtedly many more that aren’t. But it was mostly a locally known taco stand. That day, the Michelin Guide, the world’s most widely recognized arbiter of fine dining, released its first Mexican edition. Of the 18 establishments in Mexico awarded at least one Michelin star, many of them fancy restaurants, El Califa de León was the only street-food stand. (Outdoor food stands in other parts of the world have been awarded Michelin stars.)

Another surprise Michelin award came in April when Disney World's Victoria & Albert's restaurant — which it calls its "culinary crown jewel" — earned a coveted star. CNN —A tiny, no frills taco stand in Mexico with just four items on its menu has been awarded a star by the coveted Michelin Guide. Taquería El Califa de León, located in the San Rafael neighborhood of Mexico City, was among the establishments to garner either one or two stars in the first ever Michelin Guide Mexico, published earlier this week, making it the first Mexican taco stand to receive the honor. CNN —A New Orleans restaurant featuring a modern Senegalese tasting menu and an Ethiopia-born chef who studied psychology before turning to a culinary career are among the restaurants and chefs named as finalists for the coveted James Beard Awards. The finalists for the Restaurant and Chef Awards were announced Wednesday in Washington, DC. In the Emerging Chef category, Fariyal Abdullahi, executive chef at Hav & Mar in New York, is among the five finalists. Most people think of endangered languages as far-flung or exotic, the opposite of cosmopolitan. All told, there are more endangered languages in and around New York City than have ever existed anywhere else, says Perlin, who has spent 11 years trying to document them. She has published children’s books in Wakhi and other endangered languages of the Pamir mountains in Central Asia. By the start of the pandemic, the city had begun official outreach in nine Indigenous languages and recorded videos in several other endangered languages. We cross-referenced E.L.A.’s New York City language list with three independent databases that track the threat level of languages around the world: Ethnologue, which catalogs all known living languages in the world; UNESCO’s World Atlas of Languages, a survey of all the languages spoken in UNESCO member states; and the Endangered Languages Project, a site to which the public can contribute content, managed by the First Peoples’ Cultural Council and the Endangered Languages Catalogue (ELCat) project at the University of Hawaii at Manoa.

The Catholic Diocese of Sacramento confirmed that they found “no evidence of any connection” between the fake priest and their diocese. Garibaldi and three other restaurant owners and operators were ordered to pay $140,000 in back wages and damages to 35 employees. The restaurant will also have to pay $5,000 in civil penalties. Investigators also found that the restaurant denied employees overtime pay, managers were paid bonuses from the employee tip pool and some employees faced “adverse immigration consequences” for cooperating with investigators. “This employer’s despicable attempts to retaliate against employees were intended to silence workers, obstruct an investigation and prevent the recovery of unpaid wages,” Pilotin said.

An owner of a Northern California taqueria was the target of a federal wage theft investigation in November 2021 when he brought in a strange guest to talk to his employees. Eduardo Hernandez told workers at Taqueria Garibaldi in Sacramento that the man, who claimed to be a priest, was there to hear confession and “help with mental health,” according to an account that one employee gave federal regulators. But the employee, Maria Parra, found her interaction with the man to be more like an interrogation than a confession. Ms. Parra said that he told her he would ask her questions “to get the sins out of me.” But when the questioning began, the man “mostly had work-related questions,” she said. “The priest asked if I had stolen anything at work, if I was late to my employment, if I did anything to harm my employer and if I had any bad intentions toward my employment,” Ms. Parra said in a sworn declaration.
