Barring the afternoon snack of school children, it’s true: Snacking between meals isn’t really a thing in France. Unless, of course, you swap in the word snack for “apéro.” Pausing for a drink and small bite during apéritif hour is sacred across France — and easily translates to your own backyard. The word apéritif, derived from the Latin “aperire” or “to open,” refers both to a set of low alcohol-by-volume bottles (such as vermouth, sherry or Suze) as well as drinks. Meant to whet the appetite and always paired with a small, savory bite, l’apéro often takes place during the transition from day to evening, though a lunchtime apéro isn’t unheard-of.

To maintain a through line among different drinks, you need a deeply flavorful base. During the holidays, she often makes cranberry shrub by combining equal weights fresh cranberries, sugar and apple cider vinegar in a food processor. Since the shrub has plenty of acid, you don’t need to add fresh citrus to the drinks you make with it. Another workhorse base is oleo-saccharum, which is classically made by muddling citrus peels with sugar before setting the combination aside overnight. In this flavorful base, the sugar slowly extracts the oils from the peels and the sticky-sweet mixture adds dimension and texture to drinks.

The Italian cocktail, Aperol Spritz, appeared multiple times on HBO's "White Lotus" series. According to Campari, the maker of Aperol, the apéritif is gaining market share in the US, in part because of its repeated appearances in "The White Lotus." Aperol Spritz has often been seen as a divisive drink. Aperol sales, which account for 22% of Campari's total portfolio, grew by nearly 50% in the US in 2022. Campari isn't the only business to see a boost from what has been dubbed as "The White Lotus" effect.
