CNN —Archaeologists have identified the cannibalized remains of a senior officer who perished during an ill-fated 19th century Arctic expedition, offering insight into its lost crew’s tragic and grisly final days. The remains identified as Fitzjames’ in the new study, published September 24 in the Journal of Archaeological Science, were among them. The remains of James Fitzjames, a senior officer who took part in Sir John Franklin's lost expedition to the Northwest Passage, showed signs of having been cannibalized, a new study said. However, unlike Fitzjames’ remains, Gregory’s bones did not display any cut marks suggestive of cannibalism. Canada’s national parks service and the Inuit communities found the final resting place of the HMS Erebus in 2014 and the HMS Terror in 2016.

CNN —The Oscars of the food world — the James Beard Awards — were handed out Monday night to many chefs and restaurants reflecting cultures and regions that have long been overlooked when honoring culinary achievement in the United States. Outstanding Chef winner Michael Rafidi dedicated his award to Palestinian people all over the world in his acceptance speech. The 2024 winners bring heritage from all over the globe — the Philippines, Mexico, Japan, Peru, Vietnam, Senegal — to tables across the United States. This year’s awards also bring recognition to restaurants in many smaller towns and states that have not historically been recognized with James Beard Awards. Chef Masako Morishita received the James Beard Award for Emerging Chef.

Buried in corporate filings is another relationship that is central to Humacyte: Russian billionaire Gavril Yushvaev is the company’s second-largest individual shareholder. Humacyte: Russian billionaire has no ‘control’ over firmYushvaev has not been sanctioned by the US government. “There are patients walking today on their own limbs who would not be doing so without access to the HAV to repair their damaged arteries,” a Humacyte spokesperson said. ‘It shows poor judgment’Yushvaev was brought in as an accredited private investor by Credit Suisse’s capital markets advisory group, a Humacyte spokesperson told CNN. It's a small tube called the human acellular vessel (HAV) designed to treat traumatic vascular injuries mostly due to blasts and shrapnel. Why vascular injuries are so dangerousVascular injuries are a leading cause of preventable death in military combat and a leading cause of amputation. They're lab-grown from human vascular cells in about eight weeks and then sanitized to be ready as an off-the-shelf replacement blood vessel. HumacyteVascular surgeons often treat traumatic vascular injuries with grafts. Humacyte plans to file an application with the FDA later this year for HAVs to treat traumatic vascular injuries.

I’ve been blessed to travel the world chasing flavors, wandering through markets, dining at fancy restaurants and eating at mom-and-pop food trucks. It makes me think of a woman who inspires me like no other: the great Creole chef Leah Chase. “In my dining room, we changed the course of America over a bowl of gumbo and some fried chicken,” she once said. I turned to her legacy for inspiration, motivated by how her restaurant helped shape the civil rights movement and sustained the community. To me, this is the spirit of true American food, which is more democratic than ever.

Goodbye to the Bread Basket. Hello to the Bread Course.

At Nura, in Greenpoint, Brooklyn, it’s two fresh rounds of butter-drenched naan, nestling a pair of warm Parker House rolls. At Dauphine’s, in Washington, D.C., it’s fat slices of sweet potato brioche with buttermilk biscuits and a demi-baguette. At Le Fantastique, in San Francisco, the “Bread & Butter” gets equal billing with the mains: $12 for a baguette with smoked-peppercorn-and-yuzu-kosho-infused butter. Hav & Mar’s basket with Ethiopian-influenced teff buttermilk biscuits and sweet blue cornbread is $19, Nura’s basket is $21 and both offerings come with an assortment of dips. Customers would ask, “$21 for a bread basket?” But, Ms. Short said, that’s always followed by, “It was totally worth it.”
A new generation of airships is taking to the skies

It’s an airship, and French aeronautics company Flying Whales hopes its hybrid-electric, helium-lift vessel will change the shape of sustainable transport. Flying Whales' airships, pictured here in a render, could access remote locations without roads, railways or airports. That’s why most companies, including Flying Whales and LTA Research, are using helium, which is non-flammable. Prentice is also the founder and president of BASI, a Manitoba-based company specializing in airships adapted for cold climates. Flying Whales expects to test its first airship at the end of 2025, with commercial operations beginning in 2027 once the airship is certified.
