Listeria monocytogenes is a type of bacteria that can contaminate food and cause serious complications for certain groups of individuals. Even though cooking the meat kills any listeria that may be present, deli meat can be contaminated afterward during packaging or slicing. Similarly, the ready-to-eat meat products involved in the ongoing BrucePac recall are precooked, although the source of contamination hasn’t yet been determined. Listeria infection early in pregnancy can cause premature labor, a baby with a low birth weight and loss of the pregnancy. According to the Centers for Disease Control and Prevention, around 1,600 people are infected and 260 people die from listeria infection in the United States every year.

PARIS — President Emmanuel Macron celebrated his country’s success at the Olympics and turned the tables on Jimmy Fallon, who hosted Sunday night’s closing ceremony. Speaking with NBC News at the presidential palace in Paris on Sunday, Macron expressed optimism about the potential for the global community to “do great things” together. He said he even appreciated the jokes about French clichés because France was able to show its unique landscapes, heritage and culture over the last two weeks. Pregnant people are about 10 times more likely to become sick from listeria, and the illness can be fatal to the fetus. Foods made with raw milk are 50 to 160 times more likely to contain listeria, the agency said. Always carefully wash your hands after touching any type of hot dog, lunch or deli meat, the agency said. Toss opened packages of deli meats or any sliced by a deli after three to five days, and hot dogs after one week. Shelf-stable foods, such as canned tuna, sardines and salmon, will not increase the risk of listeria.

Hotter and drier summers are making it harder for French cheesemakers to meet traditional standards. Cheeses that carry an AOP label, such as Camembert de Normandie and Roquefort, have to meet certain standards and quality levels. Now some cheesemakers are arguing those rules may need to be changed, as hotter and drier summers are killing some pastures. Other cheesemakers are experimenting to see how they can produce the same quality product and still meet the traditional rules, despite changes in the environment. French cheese is only the latest beloved food product threatened by climate change, which is making global food systems more vulnerable.

Mozzarella sticks got love too; his devotion to fried cheese was vast and deep. He’d adore Zainab Shah’s new recipe for paneer chile dry (above), a dish of shallow-fried paneer cubes with a peppery, gingery ketchup-soy sauce. Served on both sides of the Pakistani-Indian border, it’s spicy and sticky, crisp and melting, and you can even swap out the cheese for tofu.

Dutch babies, eggy batter poured into a hot pan filled with butter, are an example of that. They’re served either sweet (as in this caramel apple version) or savory (with bacon and runny Camembert). It’s a fulfilling magic trick, to serve Dutch babies. Today, I’m excited to make Yewande Komolafe’s new recipe for a goat cheese and dill Dutch baby (above), topped with crunchy watercress and dressed with drizzles of honey and lemon juice.
