Freezer cookies are like cookies on demand.
So I’m going to do this over a double boiler, which is my preferred method for melting chocolate.
The idea is that basically, you have a lower piece that has a little bit of simmering water in it.
You should have plenty of coating to get through all three logs, plus probably a little bit left over.
Once you have those formed cookies, that’s actually the perfect time to freeze them solid.
