A Dinner Party So Easy You Don’t Even Need Recipes

For the main course, cauliflower cheese, a British comfort-food classic, you really don’t need a recipe. Again, it’s the technique you need, specifically making a white sauce (béchamel). Coat the cauliflower in sauce, shower with whatever kind of cheese you like and bake until golden and bubbling. The “recipe” is quite forgiving, and because cauliflower cheese can often be a bit bland, I added a sprinkling of cumin seeds and a touch of ground cayenne. Baked cauliflower for dinner on its own is lovely, but it can also be a vegetable accompaniment, say, for roast chicken (which, dare I say, you could even make without a recipe).

Read previewI have followed the Mediterranean diet for years, and I've come across a lot of myths and misconceptions about it along the way. Read on for some popular debunked myths about the Mediterranean diet based on my experience as a longtime follower. AdvertisementDespite its name, it's not really a dietThe Mediterranean diet isn't really a diet — it's a lifestyle. Extra-virgin olive oil can also get expensive but it's truly a staple and it's often better than using more refined oils, like canola, vegetable oils, and very light olive oil. For example, avocado isn't traditionally part of the Mediterranean diet but I still incorporate it into my Mediterranean-style recipes daily.

I've been following the Mediterranean diet for years, and I've learned a lot of simple recipes. I take a minimalist approach to my diet and often only use a few ingredients in my meals. I've discovered a love for orange, avocado, and shrimp saladI wasn't initially convinced that orange, mustard, and shrimp went together. I've concocted a Mediterranean version of a make-your-own pizzaIf you have an at-home dinner date coming up, make some puff-pastry pizza together. I've only recently discovered tofu, and I've been enjoying adding it to salads and grain bowls for a protein boost.

AdvertisementI don't miss red meat at allI used to eat a lot of red meat. That was one of the near-instantaneous benefits I noticed when I started following a Mediterranean diet. Fortunately, it's really easy to make budget-friendly swaps and still stick to a Mediterranean diet. There isn't just one Mediterranean dietI think one of the biggest misconceptions I had about the Mediterranean diet before I started following it was that it was pretty limited. Although a Mediterranean diet can be Greek, French, Spanish, and Italian, it's also Turkish, Lebanese, Israeli, and Moroccan.

BRUSSELS (Reuters) - Top EU officials will raise an array of concerns from Russia's invasion of Ukraine to trade irritants in a summit with Chinese leaders on Thursday that is expected to be long on firm words, but short on outcomes. European Commission President Ursula von der Leyen, European Council President Charles Michel and EU foreign policy chief Josep Borrell meet Chinese President Xi Jinping in the morning and Premier Li Qiang in the afternoon on their one-day visit to Beijing. There will be no joint statement from Thursday's talks, EU officials said, and they do not expect concrete outcomes from the first in-person EU-China summit since 2019. The European Union will also have questions on Chinese intentions towards Taiwan, but its focus will be on Russia's invasion of Ukraine. EU officials say the two sides could cooperate more on action to combat climate change and to promote biodiversity.

Meats and fishBeef, chicken and fish are great for protein, and they can double as rich sources of choline. Beef liver is one of the highest available food sources of choline, which makes sense, as the liver is the organ that produces choline. Blackened cod is a great choice for delicious and easy fish tacos. EggsEggs are the second highest food source of choline after beef liver, providing 147 milligrams per one large egg. Makers of Parmigiano-Reggiano in Italy are adding microchips to their cheese wheels. That's because makers of Parmigiano-Reggiano are implanting microchips into the casings of their 90-pound cheese wheels as the latest move to ward off counterfeiters, The Wall Street Journal reported. That's because it's the original parmesan cheese officially protected by the European Union, meaning the name can only be used for the authentic product. Make it a cool pickle summer with this easy method

Sure, you can preserve food with a more advanced water-bath canning method, especially if you’re planning to save your summer pickles for up to a year. Or add pickled vegetables such as green beans or cauliflower to a grain salad or grain bowl as a topping. While pickled vegetables are always welcome in pasta salad (and potato salad, for that matter), they also bring an unexpected zing to hot pasta recipes. Or add pickled shallots, broccoli or peppers to pesto-sauced noodles. And when it’s too hot to think of anything else to do, there’s always “snack dinner” with a variety of pickled vegetables to save the day.

Extra-virgin olive oil, yogurt and feta cheese are dietary mainstays, along with seasonal produce, legumes, whole grains and lean proteins. Made from deep-red Halaby chile peppers, Aleppo pepper is named for the Syrian city where it once grew in abundance. Peas and Feta Make Everything Better

But by the time I putter into the kitchen, it’s nearing 9 p.m., and I’m wondering where another April evening has gone. Flash-frozen at their peak, these peas will rival any fresh ones you might spot at a farmers’ market, and require far less prep time. (Though if you come upon fresh peas or happen to grow them, know that I am jealous.) If I have a block of feta in the cheese drawer, I’m that much closer to dinner. Pops of sweet, starchy peas giving way to bits of tangy, crumbly feta is the good kind of springtime sensory jolt.
Because of the versatility and hands-off aspect of the preparation, these are some of my favorite breakfast options for road trip vacations and camping adventures — but they work for busy at-home mornings, too. NelliSyr/iStockphoto/Getty ImagesTartines, AKA open-faced sandwiches — or as I like to call them, “things on toast” — comprise a catchall category of breakfast options that can skew savory or sweet. When I have a few minutes and am feeling famished, my go-to move is to grab eggs and tortillas for breakfast tacos or burritos. Eggs and tortillas pair well in the morning to make breakfast tacos or burritos.
