Homelessness is highest in cities with exorbitant rents, but small cities and rural communities are not shielded from the housing crisis. Because rural America lacks many social services, like free clinics, soup kitchens and shelters, the rural homeless often make their way to places like the Water Street Mission. We spoke with several people staying at the Water Street Mission, some of whom were there for the first time and some who had sought refuge there many times before. Levon Higgins, 50, has been staying at Water Street for the last six months : I just couldn’t afford to live where I was. Jennifer Berrie, 45, was staying in an overnight-only shelter before Water Street : I miss little things you don't even think of.

Here's what my partner and I usually get for $350 in our high-cost-of-living California city. AdvertisementWe usually pick up variety packs of Poppi, which contain prebiotics for gut health and have fewer calories and added sugars than most sodas. There are few places to grab bagels around my home now, so the bagels at Costco are a decent replacement. Instead of using cream cheese, I put Laughing Cow spreadable cheese on my bagel, preferably the light option if Costco has it. It's a good substitute for unhealthier snacks, and a pack of 60 only costs us about $10 at Costco.

I recently made Ina Garten's ravioli en brodo soup, an Italian twist on chicken noodle. I've made more than 40 of Garten's recipes and the ravioli en brodo is one of my absolute favorites. AdvertisementAfter making my way through Ina Garten’s delicious pastas and desserts , I decided to try some of her comforting soups. I’ve whipped up the Barefoot Contessa’s savory chicken chili and soothing winter minestrone , but the soup I’ve been most excited to try was her ravioli en brodo — an Italian spin on chicken noodle. I decided to challenge myself and make Garten’s homemade chicken stock for this dish, and it was definitely worth the extra effort.

Bob Moore, Who Founded Bob’s Red Mill, Is Dead at 94

Bob Moore, the grandfatherly entrepreneur who, with his wife, Charlee, leveraged an image of organic heartiness and wholesome Americana to turn the artisanal grain company Bob’s Red Mill into a $100 million dollar-a-year business, died on Saturday at his home in Milwaukie, Ore. His death was announced by the company, which did not cite a cause. Founded in Milwaukie in 1978, Bob’s Red Mill grew from serving the Portland area to become a global natural-foods behemoth, marketing more than 200 products in more than 70 countries. Over the years, the company profited handsomely from the nutrition-minded shift away from processed foods and grains. “I think our diets, nationally, and international probably, show the fact that we just have allowed ourselves to be sold a bill of goods.”

I could write a meal plan for someone to lose weight, but I now know it's never about being told.
