These Are Superior Potatoes
  + stars: | 2024-01-26 | by ( Sam Sifton | ) www.nytimes.com   time to read: +1 min
Mark Bittman is a freewheeling cook, a minimalist, open to improvisation. If I were writing his biography, I’d title it “Largely Unattended.”Kenji López-Alt is the opposite: an exacting, scientifically minded kitchen authority who employs terms like “polysaccharide glue” to explain why, for example, his Parmesan-crusted roasted potatoes (above) are so shockingly crisp and delicious. Read the recipe a few times before you make it, and then watch him make the dish on our YouTube channel so you’re well acquainted with the process. You’ll see. These are superior potatoes, amazing potatoes, just the dish to accompany a cast-iron steak that, when you’ve come to the end of the cooking process, you should take off the heat and baste in butter, with a healthy sprig of rosemary and a couple of cloves of garlic.

Ukrainian Mi-8 helicopters attack Russian positions with the use of unguided rockets. Part of the larger problem facing Ukrainian helicopter pilots is identifying where threats are coming from in combat environments.

Last year, after moving to Spain, his family took him to a hearing specialist, who made a surprising suggestion: Aissam might be eligible for a clinical trial using gene therapy. On Oct. 4, Aissam was treated at the Children’s Hospital of Philadelphia, becoming the first person to get gene therapy in the United States for congenital deafness. His is an extremely rare form, caused by a mutation in a single gene, otoferlin. Otoferlin deafness affects about 200,000 people worldwide. The goal of the gene therapy is to replace the mutated otoferlin gene in patients’ ears with a functional gene.

Drones Are Hit and Miss for Ukrainian Soldiers
  + stars: | 2024-01-23 | by ( Jan. | At A.M. | ) www.usnews.com   time to read: +3 min
Unmanned aerial vehicles (UAVs), or drones, have become vital for Ukraine's military since Russia's full-scale invasion in February 2022. "And most of them are because of low-quality parts that are used very often to make the drones even cheaper." AN INTEGRAL PART OF UKRAINE'S WAR EFFORTUkraine's defence ministry did not immediately respond to a Reuters request for comment on the soldiers' remarks. Drones range from small UAVs controlled remotely to larger devices that can fly hundreds of kilometres deep into Russian territory. Despite their impact, Sam said drones could not win the war on their own.

The most recent bear market was a garden variety bear, Stovall said. The decline, which lasted roughly 15 months from its October 2022 low, took 25.4% of the S & P 500 value from peak to trough. Regardless of what kind of bear market it was, a post-high five move still took place once a bull run was confirmed. The S & P 500 gained 5% on average over the following two to two-and-a-half months. He noted the S & P MidCap 400, S & P SmallCap 600, and Russell 2000 are all more than 10% below their previous record highs.

Sundays Are for Bolognese

If there’s a better scent in the world than Marcella Hazan’s Bolognese sauce (above), I’m unaware of it. Well, apart from fresh-baked apple pie, that is. And wooden boats, spit-roasted lamb, fresh-cut hay and Jamaican black cake. But Bolognese is pretty great: that milk-calmed tomato over a bass line of beef, with a whisper of nutmeg warmth and a low hum of buttery onion. It’s just the thing for a Sunday afternoon of winter cooking, grandma-style, in advance of a family dinner.

My Boston baked beans taste different from Amanda Hesser’s now that I’ve made the dish a gajillion times. They’re both the same recipe. Take my recipe for oven-roasted chicken shawarma, which lots of people make. (More than 17,000 readers have given it a rating on New York Times Cooking.) It was utterly fantastic, and utterly her own — more lemony than mine, a little warmer in spice, the meat cut a little differently — even though she followed the recipe exactly.
