Frederick Wiseman’s transporting documentary “Menus-Plaisirs — Les Troisgros,” centers on a dynasty of French chefs who live and work in a pastoral region in central France named Ouches, some 65 miles west of Lyon. The chef Daniel Boulud includes the Troisgros salmon recipe in several of his cookbooks. “Menus-Plaisirs” is Wiseman’s 44th documentary and the first that he’s made since “City Hall” (2020), which notionally focuses on the administration building for the city of Boston. (In between “City Hall” and “Menus-Plaisirs,” he made one of his rare forays into fiction, “A Couple,” about Sophia Tolstoy.) Wiseman directed, edited and served as one of the producers on “Menus-Plaisirs,” which runs a heroic four hours (about a half-hour shorter than “City Hall”!).

Replacing an aging bridge over the Wisconsin RiverThe I-39/90/94 bridge, which crosses the Wisconsin River, is set to be replaced. Earlier this year, the project received $25 million from the infrastructure law. The Susquehanna River Bridge in Maryland and the Connecticut River Bridge – both of which are more than 100 years old – will also be replaced. The country's canned seafood industry is moving well beyond tuna sandwiches, a pandemic-era trend that began with Americans in lockdown demanding more of their cupboard staples. A menu from that night, with an embossed red White Star Line flag at the top and signs of water damage, will go up for auction on Saturday at Henry Aldridge & Son Ltd in southwest England. It is expected to sell for up to 70,000 pounds, or about $86,000. The auction will include hundreds of other maritime items, including a White Star Line tartan blanket that was recovered from a Titanic lifeboat and a pocket watch owned by a second-class passenger, a Russian immigrant, who did not survive the sinking.

In July, California's Department of Toxic Substances Control adopted a rule requiring tire manufacturers to evaluate safer alternatives to 6PPD, noting the threat to coho salmon. Together, the 13 tire manufacturers sued on Wednesday account for 80% of the domestic U.S. tire market, according to the lawsuit.

Tiny but bountiful, Antarctic krill make up one of the planet’s largest biomasses, nourishing everything from fish to marine mammals and seabirds. At Steinberg’s lab, researchers are examining how warming oceans — Antarctic krill need water colder than 4 degrees Celsius (39 Fahrenheit) to survive — are altering krill’s life cycle. However, a leading marine biologist the industry once relied on to burnish its environmental credentials has since denounced krill fishing. She accepted with the hope that she could help mitigate the effects of krill fishing on the Antarctic ecosystem. Today, she believes that krill fishing should be banned.

ANCHORAGE, Alaska (AP) — When it comes to packing on the pounds to survive an Alaska winter, this year’s undisputed champ is Grazer. Grazer, also known as Bear 128 to the fans of Fat Bear Week at Alaska’s Katmai National Park and Preserve, won this year’s contest, handily defeating Chunk 108,321 to 23,134 in the finals. They then vote in tournament style brackets over the course of a week, advancing bears to the next round until a champion is crowned. A true mama bear, she’s known to attack larger bears, even adult males, to ensure her cubs are safe.

CNN —Voting is over in Katmai National Park & Preserve’s annual Fat Bear Week contest, in which the public picks from 12 big ‘n’ bulky bears in an online brackets-style tournament. Grazer was first identified as one the bears dining in Katmai’s Brooks River in 2005 as young cub. The runner-up32 Chunk shows off his fat form on September 17, 2023. Even Bear 747 – the 2022 Fat Bear Week champ – yielded fishing spots and salmon to him. Meanwhile, Bear 747 was eliminated in his first round of play this year, showing again no bear can rest on his or her feasting laurels.
