Frederick Wiseman’s transporting documentary “Menus-Plaisirs — Les Troisgros,” centers on a dynasty of French chefs who live and work in a pastoral region in central France named Ouches, some 65 miles west of Lyon. The chef Daniel Boulud includes the Troisgros salmon recipe in several of his cookbooks. “Menus-Plaisirs” is Wiseman’s 44th documentary and the first that he’s made since “City Hall” (2020), which notionally focuses on the administration building for the city of Boston. (In between “City Hall” and “Menus-Plaisirs,” he made one of his rare forays into fiction, “A Couple,” about Sophia Tolstoy.) Wiseman directed, edited and served as one of the producers on “Menus-Plaisirs,” which runs a heroic four hours (about a half-hour shorter than “City Hall”!).

Washington CNN —More than 40,000 projects have received federal funding from the $1.2 trillion infrastructure law signed by President Joe Biden two yeas ago. Replacing an aging bridge over the Wisconsin RiverThe I-39/90/94 bridge, which crosses the Wisconsin River, is set to be replaced. Earlier this year, the project received $25 million from the infrastructure law. The Susquehanna River Bridge in Maryland and the Connecticut River Bridge – both of which are more than 100 years old – will also be replaced. The infrastructure law allocated $22 billion to Amtrak directly, some of which is being used to replace its fleet of more than 1,000 railcars and locomotives.

The country's canned seafood industry is moving well beyond tuna sandwiches, a pandemic-era trend that began with Americans in lockdown demanding more of their cupboard staples. U.S. canned seafood industry sales have grown from $2.3 billion in 2018 to more than $2.7 billion so far this year, according to market research firm Circana. “I was eating the same canned fish that my great grandmother Rose in Brooklyn was eating in the 1930s," she said. “I thought that was just insane.”Her company, Fishwife Tinned Seafood Co., set out to offer high-quality, sustainably sourced seafood. “Our mission is really to just galvanize the canned fish industry and transform and make it what we think it can be,” Millstein said, adding that means offering much more “than tuna fish sandwiches."

The fishing groups said the chemical, which becomes toxic when it degrades, is released from tires as vehicles drive around and park. The tire manufacturers did not immediately respond to requests for comment on Wednesday. In July, California's Department of Toxic Substances Control adopted a rule requiring tire manufacturers to evaluate safer alternatives to 6PPD, noting the threat to coho salmon. Together, the 13 tire manufacturers sued on Wednesday account for 80% of the domestic U.S. tire market, according to the lawsuit.

SINGAPORE, Oct 31 (Reuters) - At least three Chinese companies including state giant China National Offshore Oil Company (CNOOC) are evaluating Shell's Singapore assets and considering non-binding bids in coming weeks for the city-state's oldest refinery, according to several sources familiar with the matter. CNOOC, the parent of offshore oil and gas major CNOOC Ltd , operates a joint refining-petrochemical complex with Shell in southern China. However, Sinopec Corp's president said in late August it was not interested in the Shell assets. Two of the sources said Shell had set a preliminary Nov. 5 deadline for proposals, although that could be extended. A Wanhua spokesperson said he was not aware of the company's potential interest in the Shell assets.

CNN —Golf courses, despite occupying large green spaces, are not necessarily good for the environment. Santa Barbara's Ocean Meadows golf course has been returned to its wetland state, which doubles as a flood defense for the city. Rivers and streams are often diverted or altered to make way for a golf course, but conservationists want them to flow freely. In other areas of the country, local councils are repurposing unprofitable municipal golf courses to create more natural spaces. A golf course turned nature reserve, Yalukit Willam can now be enjoyed by the Melbourne residents.

MANCHESTER, England (AP) — Bobby Charlton, an English soccer icon who survived a plane crash that decimated a Manchester United team destined for greatness to become the heartbeat of his country's 1966 World Cup-winning team, has died. “Sir Bobby was a hero to millions, not just in Manchester, or the United Kingdom, but wherever football is played around the world,” United said. “There was always one great hope — the return to greatness of my beloved club,” Charlton said. The biggest prize of his club career arrived in 1968 as United became the first English club to become champion of Europe. But Charlton is perhaps best known for being part of the England team that won the World Cup.
