A New Recipe for a Very Old Hummus
  + stars: | 2023-07-30 | by ( Sam Sifton | More About Sam Sifton | ) www.nytimes.com   time to read: 1 min
There’s some very nice writing about recipes in The New York Times Magazine this week, not surprisingly under the byline of Ligaya Mishan. Her subject is a hummus recipe (above), dating back to 13th century Syria, that Lucien Zayan of the Invisible Dog Art Center in Brooklyn served at a dinner series he runs, la Salle A Manger. We don’t have a lot of recipes that are so old. In fact, Ligaya reports, there is no documentation of hummus recipes after the 14th century until the late 19th century. But hummus endured, as Ligaya explained beautifully: “A recipe existed only in the doing, the way that the ‘Odyssey’ once existed only in the telling, made new each time, revised, embellished, its glory subject to the seemingly boundless human capacity for error and its counterpart, invention.”Featured RecipeView Recipe →

This Hummus Holds Up After 800 Years

You take chickpeas, hard and dry, and boil them until their skins loosen and they reveal themselves, tender little hulks with souls of butter. For much of human civilization, recipes were rarely written down, and of those that were, almost none have survived. You might recognize this as hummus. Notably absent from the recipe is garlic, despite its ubiquity in the cooking of the Arab world at the time. It’s not certain exactly when garlic was introduced to the dish: Nasrallah notes that there is no documentation of hummus recipes after the 14th century until the late 19th century.

A server dressed as Ken, served pink cocktails like dragon fruit margaritas and huckleberry Malibu rum sparklers, she said. Strawberry hummus was served, along with a Barbie cake with a doll hidden inside. “I have my vintage black-and-white Barbie swimsuit, a neon spandex swimsuit and a pink patent skirt with pink cowboy boots and a pink cowboy hat,” Ms. Lester said. “I decided I needed to do a few outfit changes, just like Barbie does.”

CNN —Although the so-called “girl dinner” is being popularized by young women promoting throw-together meals on TikTok, it’s in fact an inclusive meal. I’m a middle-aged girl, and this is the style of meal I’ve been calling “snack dinner” for years. The original “girl dinner” TikTok video, posted by Olivia Maher, featured a countertop spread of grapes, cornichons, bread and cheese. There are really no rules for preparing the perfect "girl dinner" — start with your favorite snack elements and expand from there. Your solo snack plate dinner doesn’t have to include bread, cheese or charcuterie if that’s not your personal preference.

But it was the tart, earthy, tingly, subtly sweet notes provided by the sumac and Aleppo pepper that made such a lasting impression. Extra-virgin olive oil, yogurt and feta cheese are dietary mainstays, along with seasonal produce, legumes, whole grains and lean proteins. Made from deep-red Halaby chile peppers, Aleppo pepper is named for the Syrian city where it once grew in abundance. Dukkah, a blend of nuts, seeds and warm spices, makes a savory, crunchy topping on everything from soups to salads. Baharat is just one of a combination of warm spices that can punch up a chicken dish the Mediterranean way.

POOR PLAYERS We usually break out our scripts and refine what we’ve done or are transforming. Our next play is Macbeth, which we perform at various places, the bar, Sure We Can, or at people’s homes. Every actor learns the complete text of the play and we change roles on impulse so it’s constantly shifting.

Cava IPO comes in a little too hot
  + stars: | 2023-06-16 | by ( ) www.reuters.com   time to read: +2 min
The company’s IPO raised $318 million, about $30 million more than it had expected a few days earlier, to fuel its expansion. And just in time for the afternoon lunch rush, its shares opened on the New York Stock Exchange at nearly double its IPO price. That implies Cava’s valuation is close to $5 billion, over twice the amount private investors ascribed it in 2021. Cava is a lot like Sweetgreen – neither are profitable, and both have a similar number of stores. But Cava now trades at more than five times its theoretical annualized sales based on the first quarter, much higher than the 1.4 times Sweetgreen commands.

On a Thursday evening in Bay Ridge, Brooklyn, about 250 Muslims gathered in a halal Italian restaurant for a singles dating event. Some of them shied away from cameras, citing privacy concerns, while others said they were afraid of appearing “desperate.”The event was hosted by Muzz, a Muslim dating app based in London, with eight million users worldwide, according to the company. Prayer mats were set up in an outdoor dining tent for Maghreb, the fourth of five daily prayers for Muslims. Inside the restaurant, tables and chairs were cleared to make space for the mingling guests, and platters of hummus, chicken kebab wraps and Mediterranean salad were being served. ‌Topics of conversation included halal Thai food in New York (“Top Thai — we should go check it out,” one person said to another) and the difficulty of meeting new people while working remotely.

Today, Moushabeck, 36, is part of a burgeoning movement of Palestinian-American authors publishing children’s books in English with Palestinians as the main characters. Letting Palestinian children be childrenDespite recent strides in the arts, Palestinian-Americans, along with other Arab-Americans, are still woefully underrepresented in books. Between 2018 to 2022, the Cooperative Children’s Book Center at the University of Wisconsin-Madison’s School of Education found that less than 1% of children’s and young adult books released by US publishers were about Arabs. The books also feature activities related to Palestinian culture, including a recipe for hummus and a tutorial for tatreez, traditional Palestinian embroidery. Bishara, whose own family was expelled from the Galilee in 1948, says it’s important to teach Palestinian children raised in diaspora about every aspect of Palestinian culture and history, including those that cause great pain.

Jeddah, Saudi Arabia CNN —In the distant past, Muslim pilgrims came to the holy city of Mecca on foot. As emergency doctors, here are seven longevity snacks we eat to stay healthy, full and energized all day:1. HummusChickpeas, the main ingredient in hummus, are high in fiber and a great source of plant-based protein. Cava also sells its dips and spreads, like spicy hummus, tzatziki and tahini dressing, at Whole Foods and other grocery stores.
