While water levels are known to fluctuate each year, these changes have become more extreme due to the climate crisis. Communities that rely on fishing are struggling as low water levels adds to mounting problems: declining fish stocks due to pollution and overfishing. “It’s going to keep affecting us, there won’t be any more totora, the islands are deteriorating, that’s what worries us,” Charca told CNN. Shake Shack is launching three plant-based menu options this week. The new items include a veggie burger and two desserts with recipes designed by AI. The fast food chain is rolling out a new Veggie Shack burger, non-dairy chocolate shake, and non-dairy frozen custard this week, each designed using AI. The new veggie burger was "born out of testing many different veggie burger iterations" and includes "mushrooms, sweet potatoes, carrots, farro, and quinoa, topped with American cheese, crispy onions, pickles and ShackSauce," Shake Shack said in a statement. NotCo also makes it own line of products including NotMilk, NotBurger, and NotChicken, and the new Shake Shack milkshake options use the company's non-dairy milk.

Chipotle is launching a virtual restaurant brand featuring "California-inspired" bowls. The virtual restaurant makes its debut later this month in a ghost kitchen in Santa Monica, California. Farmesa will operate at the Kitchen United Mix food hall at Third Street Promenade, a tourist-heavy outdoor retail center in Santa Monica. Kitchen United is a Pasadena, California-based ghost kitchen operator with locations all over the US. Chipotle's new concept, Farmesa, is opening later this month at ghost kitchen/food hall Kitchen United Mix.
Plant-based burger chain Next Level Burger is backed by Whole Foods. He'd given up red meat in 2010, after his mother died of cancer at 56. Both became early backers of de Gruyter's brand, Next Level Burger, which has grown to nine restaurants in six states. Following a $20 million raise last fall, Next Level Burger opened its 10th location and second restaurant in Seattle in late January. Next Level Burger patties are made of quinoa and mushrooms.

Abu Dhabi-based startup StarLab Oasis, a spin-off from Texan company Nanoracks, wants to grow seeds in outer space in order to develop plant varieties that can survive on a less hospitable Earth. In 2023, StarLab Oasis expects to send its first seeds into orbit. From soybeans to quinoa, seeds grow differently in space than on land. Sending seeds to space will help “sustainability, climate change, and food security on Earth,” StarLab Oasis’ co-founder Allen Herbert tells CNN Business. It plans to work with companies, space agencies, universities and non-profits, to send seeds to space either for research or commercial purposes.
UAE asks state entities to buy local in food security push

The UAE, which imports 90% of its food, took the decision at an annual government meeting last month to support local production while continuing to embrace open trade policy, Mariam Al Mheiri told the World Policy Conference in Abu Dhabi. The Gulf Arab oil producer, which will host the COP28 climate conference next year, is making a big push on food security in the region and beyond. Among initiatives is a vertical farm producing leafy greens under a joint venture between Emirates Flight Catering and U.S.-based Crop One. Vertical farming uses a series of stacked levels to produce crops. The Emirati minister said berries, salmon and quinoa were also being farmed in the UAE, and that the country has ambitions to grow grains in closed-system farms where water is recycled.
At least half of the grains consumed daily should be whole grains, according to the USDA's recommendations. “Consumers need to be careful when they go shopping for whole grain foods,” said Zhang. What’s important is the percentage of the total grain in the food that is actually whole grain, Zhang said. The 2015-2020 Dietary Guidelines for Americans identifies whole grain foods as those containing 50% or more by weight of the grain- or flour-containing component as whole grain ingredients. For example, when a product is described as being made with whole grains, that doesn’t mean it’s 100% whole grains, Cholewka said.
