Tokyo CNN —Three foreign-born residents in Japan are suing the country’s government over alleged racial profiling, highlighting an ongoing debate about Japanese identity and nationality. The three plaintiffs, all residents of Tokyo, filed the lawsuit in the Tokyo National Court and held a news conference with their lawyers on Monday, according to public broadcaster NHK. One plaintiff came to Japan from India after marrying his wife, and has lived there for more than 20 years, NHK reported. Since then, he has been repeatedly stopped and questioned by police officers on the street, sometimes twice a day. The third plaintiff is an American-born man who said he hoped to raise awareness of the issue among the Japanese population, according to Reuters.

New York CNN —Kraft’s new Mac & Cheese is ditching the cheese and going vegan. “Curiosity is a major factor in trying plant-based foods and beverages,” Sherry Frey, vice president of Total Wellness at NIQ, told CNN. The vegan cheese sauce is made with fava bean protein and coconut oil powder, creating a sauce that has a “similar taste, look and feel to dairy-based mac and cheese,” the company told CNN. Goodles, for example, is a Gal Gadot-backed startup that sells boxed pasta with more protein and fiber at a higher price that also has a plant-based mac and cheese in its portfolio. In particular, the Kraft brand recently rolled out a makeover of its Kraft Singles cheeses that emphasizes the cheese doesn’t have artificial flavors, colors or preservatives.

The private equity firm has offered to buy Wagamama owner Restaurant Group (RTN.L) for 701 million pounds including debt. Restaurant Group is an obvious takeover target. And Restaurant Group itself reckons it can crank up its EBITDA margin by as much as 3.5 percentage points by 2026. Apollo could comfortably double its money, assuming it used debt of around 300 million pounds to buy the business, or 3 times 2024 EBITDA. The deal is being undertaken by a special purpose vehicle indirectly owned by Apollo Funds, managed by affiliates of Apollo Global Management.

There are several ways the Japanese serve and cook soba, a nutty-tasting, brilliantly slurpable noodle made of buckwheat flour. I was seduced, so I went back the next day, again joining the long lunch line and, again, ordering my cold soba, with a serving of tempura shrimp. Buckwheat flour on its own is expensive, and the noodles it produces tend to be brittle. Commercial dried soba noodles manage to retain some of that texture and much of the flavor, as long as they are not overcooked. Once cooked and refreshed, your soba noodles can go into a cold broth, as they do in this recipe.
