Meat from dairy cows, rarely valued in American kitchens and restaurants, usually becomes dog food and fast-food burgers. When mature dairy cows (about six years old) are allowed to pasture longer, their fat, which normally goes into milk, returns to the muscles and makes the meat richer and more tender. But a few farms, including Mindful Meat in Marin County, Calif., and Butter Meat Company in Pavilion, N.Y., just west of the Finger Lakes, have been selling meat from culled dairy cows and convincing skeptics. At Stone Barns, dairy cattle are living out their golden years munching on Pocantico Hills grass before becoming the highlight of a tasting menu that can run more than $400 per person. All the beef dishes at the restaurant are made with culled dairy meat; at the Stone Barns store, frozen strip-loin steaks are $24 a pound.

CNN —Close flybys of Io, one of Jupiter’s moons and the most volcanically active world in our solar system, have revealed a lava lake and a towering feature called “Steeple Mountain” on the moon’s alien surface. “We also got some great close-ups and other data on a 200-kilometer-long (127-mile-long) lava lake called Loki Patera. Juno detected the mountain with the help of the sun shining on Io’s surface, which created dramatic shadows that revealed a very sharp peak. CNN —The bird flu spreading through cattle in the United States is an “enormous concern” the chief scientist of the World Health Organization said Thursday as he called for more tracking and preparation for the virus. So far, there is no evidence that the highly pathogenic H5N1 flu virus can spread from person to person. Though H5N1 doesn’t spread from person to person, humans can catch it when they’re exposed to infected animals. They are only the second documented case of human H5N1 in the United States. The US Centers for Disease Control and Prevention says that while the current risk to public health from H5N1 is low, it is monitoring the situation carefully.

Well, so far US officials are saying they believe there is minimal risk to the public from the latest iteration of bird flu. According to the Global Health Security Index, there are significant gaps in countries’ pandemic preparedness capabilities. Given the impact of Covid, it is deeply disappointing that national governments are not investing the necessary resources to build life-saving pandemic preparedness capacity. Making matters worse, Congress has made major cuts to pandemic preparedness funding, as part of the ongoing appropriations process. Playing the long game also means supporting the World Bank Pandemic Fund, which is designed to invest in long-term pandemic preparedness capacity of low- and middle-income countries.

Gold has turned into money for Costco , where yellow metal sales begun last year have turned into a cash cow for the big-box retailer. In fact, sales are so brisk that analysts at Wells Fargo expect revenue "may now be running at" $100 million to $200 million a month, a rapid acceleration since bullion hit the warehouse club late in the summer of 2023. "The accelerating frequency of Reddit posts, quick on-line sell-outs of product, and COST's robust monthly eComm sales suggests a sharp uptick in momentum since the launch." Costco is selling 1-ounce bars made of nearly pure 24-karat gold. The government is on pace for a $2 trillion deficit this year, adding to a total debt load that has surpassed $34.6 trillion.

Taiwan Semiconductor Manufacturing Company is transforming the small Japanese farm town of Kikuyo into a key node in Asia’s chip supply chain. TSMC, as the company is known, dominates the global semiconductor business. At its home base in Taiwan, TSMC sits at the center of a web of factories, suppliers and engineering firms. In February, TSMC opened a factory, known as a chip “fab,” for fabricator, on a ridge overlooking Kikuyo. New York CNN —YouTube says hundreds of thousands of creators are now earning a paycheck from posting short-form videos on the platform, as it ramps up its race to compete with rivals like TikTok and Instagram. It hasn’t been cheap: the Google-owned platform is shelling out tens of thousands of dollars to some of its top Shorts creators — like beauty influencer Sydney Morgan — every month. YouTube says the fresh data to its ability to incentivize existing creators to try out a new format — and to attract new users. “I make more from just YouTube Shorts (revenue) sharing in a month than I can make on other comparable platforms in a year,” she said. YouTube declined to share data around the total amounts it’s paid to creators for Shorts in the year since it added the feature to the YouTube Partner Program.

For two Texas-based bitcoin miners, the oil deposit offers a dream resource: wasted energy. Brent Whitehead and Matt Lohstroh, both graduates of Texas A&M University, have been mining bitcoin on the oil fields of East Texas since 2019. That's when they founded Giga Energy with the goal of taking flared natural gas and turning it into electricity to run bitcoin mines, which are notoriously power-thirsty. Whitehead comes from a long line of "wildcats," a term used to describe those who engage in high-risk exploratory drilling. On the small pilot site in Argentina, Exa Tech is handling operations on the ground, Phoenix Global is providing the gas and Giga is supplying the equipment.
