Reuters —Subway sandwiches in India will no longer come with the option of a free cheese slice following revisions to its menu that analysts say are more about cost-cutting than just a matter of taste. They now charge 30 rupees ($0.40) extra for the cheese slice in most sandwiches, but are offering a free “cheezy” sauce instead. Subway has “replaced the cheese slice with liquid cheese blend … You just lost a loyal customer,” one unimpressed customer, Sumit Arora, wrote on X, the social media platform formerly known as Twitter. A Subway store manager in New Delhi told Reuters the new cheese sauce costs 400 rupees per kilogram. If a customer adds the cheese slice — which was once free — it will now cost up to 15% more.

Right now, at the market, you’ll probably find fresh shelling beans piled high in their pods. While you’re at it, scout the market for ribbonlike Romano beans, also called runner beans or flat beans. Then you’ll need some tender green beans, which can sometimes be a problem. Cooked to perfection, these seasonal treats need only a zesty vinaigrette. For me, the beans are the stars, though for all intents and purposes, this is a vegetable version of salade niçoise.

I’ve been making tomato salads almost every evening, and I have to admit I’ve grown weary of my olive-oil-salt-basil minimalism. Like many, I took in Greta Gerwig’s fluorescent “Barbie” this past weekend. “I want to take you for granted,” lands differently as an adult, I have to say. But it is — and stay with me here — how I feel about zucchini. Zucchini, however, drifts out of focus, punished for its ubiquity instead of revered for it. And even if you don’t have a green thumb, the subtly sweet summer squash is always abundant at grocery stores.

There may be no better summer sandwich than a tomato one, on white bread smeared wall-to-wall with mayonnaise and sprinkled lightly with flaky salt and a little cracked black pepper. But as he so often does when he’s cooking, Eric Kim recently came up with a few tweaks that take things to new heights. For his sandwich (above), in addition to lightly toasting the bread (that’s a yikes for some), Eric adds to his salt and pepper a sprinkle of furikake, the savory-sweet Japanese spice blend and rice seasoning. The seaweed in the mixture, he wrote for The New York Times Magazine, “amps up the tomato’s savoriness, intensifying the harmony of fruit, carb and condiment.”Excellent! A Subway outlet at a Delhi airport terminal announced the "Temporary Unavailability of TOMATOES" in a sign saying the restaurant could not get enough supply that passed its quality checks.
