Over the next six weeks or so, a trillion cicadas will emerge across the Midwest and Southeast for a brief, raucous, once-in-a-lifetime bender. “What an incredible time,” said Joseph Yoon, a particularly exuberant bug enthusiast who will hit the road and forage for the insects as they tunnel up in a mass emergence of two regional broods not seen since 1803. The synchronicity that this is all occurring in my lifetime!”Mr. Yoon is a chef who promotes an appreciation of edible insects through his business Brooklyn Bugs. For his ramp and cicada kimchi, he leaves the insects whole and intact in their crackling shells so they’re slowly permeated with a spicy fermenting juice, and serves it with a wobble of soft tofu and warm rice. He fries cicadas to make tempura, folds sautéed cicadas into Spanish tortillas with potato and onion, and bakes cheesy casseroles with cicada-stuffed pasta shells.

There are several ways the Japanese serve and cook soba, a nutty-tasting, brilliantly slurpable noodle made of buckwheat flour. I was seduced, so I went back the next day, again joining the long lunch line and, again, ordering my cold soba, with a serving of tempura shrimp. Buckwheat flour on its own is expensive, and the noodles it produces tend to be brittle. Commercial dried soba noodles manage to retain some of that texture and much of the flavor, as long as they are not overcooked. Once cooked and refreshed, your soba noodles can go into a cold broth, as they do in this recipe.

The first lab-grown chicken has been served in the US at Bar Crenn in San Francisco. Upside Foods partnered with the Michelin-starred restaurant to serve the cultivated chicken. Upside Foods and Just Meat recently received regulatory approval to sell lab-grown chicken. Winners of a social media contest were the first diners to try the cultivated chicken at Bar Crenn, the companies announced. Good Meat is also set to bring its cultivated chicken to customers this year at China Chilcano restaurant in Washington, DC, according to CNN.

Continuing my quest, I visited Fukube, another “Q Guide” favorite, located in a bustling neighborhood a couple blocks east of Tokyo Station. The main room, with just a handful of seats in front of a narrow bar counter, was full of suited salarymen. Before, I had savored the feeling each time I entered that Fukube was just as it had been since 1938. The usual images of Tokyo oscillate between two extremes: gilded metropolis of the future and repository of the aristocratic past. The “Q Guide” evokes a different, real, thoroughly proletarian and much more intriguing city, most faithfully depicted in works of art and literature that I love.

The fast-food giant announced Wednesday that customers in Germany will be able to order plant-based McPlant Nuggets starting Feb. 22. McDonald's, which has more than 1,400 locations in Germany, is also adding the McPlant burger to the country's menu. The launch comes just days before the two-year anniversary of the companies announcing their three-year deal for Beyond to become the preferred patty supplier for McDonald's McPlant burger. But it looks unlikely at this point that U.S. customers will get the chance to try the new McPlant Nuggets for themselves at the company's roughly 14,000 domestic locations. McDonald's and Beyond ended their U.S. test of the McPlant burger in 2022 and haven't announced any plans for additional testing or a nationwide launch.
