Good morning. I once spent an excellent summer day cooking in a Montauk condominium with the Korean cooking star Maangchi, who had rented the place for a vacation but still found time to help me understand the intricacies of cheese buldak, or fire chicken. It’s a recipe that I love and that I commend to you always, but it’s not the Maangchi recipe I turn to most often in the summer months. That would be her instructions for bulgogi (above), the beloved Korean barbecue dish that you can make inside or out and either way deliver deliciousness to the table, to serve with lettuce for wrapping, herbs, ssamjang, kimchi and steamed rice. I especially like it on Sundays, when I can slice the meat in the morning after breakfast and keep it in the marinade all day.

And few have perfected that balance as well as 63-year-old Varee Jeensuwan, the undeniable queen of mango sticky rice in Bangkok. In 2022, she performed at the Coachella music festival in California and ended her show by digging into a bowl of mango sticky rice. K Panich has been dishing out mango sticky rice since 1932. NEW YORK (AP) — David Bouley, the award-winning and frenetic chef whose idiosyncratic haute cuisine and crusty breads pleased critics and the public during a career chasing sleek deliciousness, has died. Bouley died of a heart attack Monday at his home in Kent, Connecticut, according to Lisa Queen, his literary agent. Other restaurants he worked in include Danube, Bouley Bakery, Upstairs at Bouley, Bouley at Home, Secession and Brushstroke, a collaborative effort with the Tsuji Culinary Institute in Osaka, Japan. Danube and Bouley Bakery each earned two Michelin stars. The restaurant Bouley — which famously had a foyer filled with apples — closed in 2017 after 30 years and several location changes, earning a three-star from the New York Times the year previously.

Thanksgiving may be a time for Americans to come together, but opinion is divided over what's on the crowded dinner table. We mostly agree on the deliciousness of pumpkin pie, say, but are split over the eternal turkey question of dark meat versus white meat. Americans 45 or older are especially likely to call turkey the best thing on the Thanksgiving table (39%), while younger adults who agree come in at 24%. One-third of U.S. adults who will celebrate Thanksgiving say that's their preferred dessert. Slightly fewer than half of men (46%) who plan to celebrate Thanksgiving say they will do hardly any or none of the cooking.

Tokyo/Hong Kong CNN —A Japanese sushi chain targeted in a spate of pranks that has sparked concern over hygiene has devised a digital conveyor belt to serve food to customers. The chain had been subject to a string of pranks dubbed “sushi terrorism” since the start of the year. Inspired by viral online videos, pranksters filmed themselves licking shared soy sauce bottles or tampering with food rotating on conveyor belts at the chain’s restaurants. Three Sushiro outlets have been fitted with the new digital conveyor belts. The student from western Hyogo prefecture said he would miss the convenience of being able to pick up sushi directly from the conveyor belts, if they are eventually phased out completely.

The recipe involves, essentially, three simple steps: Boiling the pasta, roasting ingredients on sheet pans, then tossing them all together. Because deliciousness often hinges on attention to detail, you’ll collect some of the starchy pasta water to scrape up the caramelized bits, or sucs, on the bottom of your baking sheets. Finally, you’ll toss the sauce with the pasta, vigorously dispersing the tomatoes and coating the crisp beans and filling your noodles’ nooks. You may be tempted to cut down on the precious pool of olive oil that this recipe requires, but do try to resist. Built with budget in mind, this simple pasta wouldn’t taste quite so lavish without it.

Kit Kat Cereal is hitting US shelves

General Mills is betting a lot of people do, as it is launching Kit Kat Cereal nationwide beginning this month at $5.69 for a standard-size box. A limited edition Spider-Verse Cereal – red “spiderberry” puffs with blue and white marshmallows – will be selling for a less expensive $2.99 in stores. General Mills is also launching miniature Lucky Charms and Cocoa Puffs, adding to its miniature Trix, both of which are priced at $5.69. They could either be eaten dry or be mixed in with cold water to create instant milk and cereal. Cereal sales surged to over $9 billion in 2020 or up 9% from 2019, as millions worked from home, according to data from NielsenIQ.

Dan dan noodlesIt’s nearly impossible to dislike China’s soul-comforting dan dan mian, or dan dan noodles. Dan dan noodles are named after the way they were originally sold more than 100 years ago – on a dan dan, a carrying pole, by street hawkers. Some think dan dan noodles should contain a dry mix of noodles, made with minced meat, chopped scallions, spices, crushed peanuts and various sauces. Others disagree, preferring dan dan noodles in a hot, spicy, salty and nutty broth albeit with similar ingredients. Similar to Hainanese chicken rice, the Wenchang version is often served with yellow chicken fat rice and chicken soup.
