I cleared those plates, tempted every time to sneak a rehydrating taste when there were leftovers. On my last day, the managers said I could order anything I wanted: I sat at a table, a diner for the first time, and ordered the salad. The salads of my youth, the ones I most remember, all have this effect — and they all have cheese. The contrast between cool, anchoring base note (fruit, vegetable or lettuce) and salty, creamy accent (cheese) is what makes a bite of these salads feel like more than just salad. The day I interviewed for my first food-writing job, even before getting the offer, I celebrated with a glass of rosé and a Caesar salad.

Makers of Parmigiano-Reggiano in Italy are adding microchips to their cheese wheels. That's because makers of Parmigiano-Reggiano are implanting microchips into the casings of their 90-pound cheese wheels as the latest move to ward off counterfeiters, The Wall Street Journal reported. That's because it's the original parmesan cheese officially protected by the European Union, meaning the name can only be used for the authentic product. They are being placed on the casein label, a food-safe label commonly used in cheese production, which is placed on the cheese wheel. Other industries are also considering or planning to use the chips, including makers of drugs and car parts.

"Gruyère" can be used for cheeses produced in the United States, an appeals court ruled. It's a victory for dairy groups in the US, but cheese-makers in Switzerland and France aren't happy. Gruyère is a firm yellow cheese named after the town of Gruyères in Fribourg, Switzerland, where it originated. "Cheese consumers in the United States understand 'gruyère' to refer to a type of cheese, which renders the term generic." Krysta Harden, president of the US Dairy Export Council, called the ruling an "outstanding result for manufacturers and farmers here in the United States," per Reuters.
