CNN —Nigerian chess champion and child education advocate Tunde Onakoya has broken the record for the longest chess marathon after playing for an extraordinary 60 hours nonstop under the bright lights of New York City’s Times Square. The Guinness World Record organization has not yet confirmed Onakoya’s attempt, which can sometimes take weeks, but for many Nigerians, the 29-year-old is already considered something of a national hero. Onakoya played against Shawn Martinez, a US chess champion, in accordance with the Guinness World Record guidelines that any attempt to break the record must be made by two players who play continuously for the duration. Onakoya founded Chess in Slums Africa, which seeks to empower children in underprivileged communities by using chess to enhance critical thinking and problem-solving skills, in Lagos. While palm oil is known for being cheap and controversial, red palm oil is artisanally made and much more expensive. The vibrantly colored oil is made from palm fruits and can cost three times as much as its kernel-oil counterpart. Despite the high cost, the handmade oil is a staple in West African households, used to make local dishes like jollof rice and banga soup. But what makes it different from palm oil? And why exactly is it so expensive?

Jollof rice’s popularity, especially in the diaspora, can be attributed to how quickly it comes together, essentially a sped-up version of thieboudienne. A great thieboudienne, however, resists all shortcuts. A great thieboudienne is practically an all-day affair. To my palate, a great rice dish, with its flavors layered upon one another, is like a puzzle to be solved. I love decoding the process of a dish — how it goes from simple ingredients to a subtle riot of my senses — and this is why I love thieboudienne.

Jollof rice is a West African dish made with rice, tomatoes, onions, lots of peppers and lots of spice. Each one is the best and only jollof rice. An example: A few years ago, around Christmas, my colleague Helene Cooper prepared jollof rice for the Washington bureau of The New York Times. She posted a picture of her dish on the social media site then known as Twitter, calling it “the real and righteous Liberian jollof rice. West African pretenders with your rival nonsense, sit down.”Helene’s jollof rice won raves in the District that evening, but today I want to turn your attention to Yewande Komolafe’s jollof rice (above).

Elsewhere in southwest Houston, Ms. Lakshmi tastes suya, bole, fufu, asun and jollof, tries her hand at pounding yam and practices the art of scooping soup with swallows. She moves from the kitchen at Margaret Chibuzo’s Safari restaurant to the dining room, where she shares egusi soup with the gospel singer Stacy Egbo. I encountered not just the Nigerian, but the Liberian, Ghanaian and broader West African communities in Newark and Charlotte, Atlanta and Albuquerque. By ensuring access to ingredients, they’d helped steward our shared culture a world away. Versions of egusi soup dotted menus in every city we stopped, and I relished each one.

Sometimes there’s not enough rain when seedlings need water, or too much when the plants need to keep their heads above water. Rice farmers are shifting their planting calendars. On top of that, there’s climate change: It has upended the rhythm of sunshine and rain that rice depends on. That’s a fraction of the emissions from coal, oil and gas, which together account for 35 percent of methane emissions. His experiment, carried out over seven years, concluded that by not flooding the fields continuously, farmers can reduce rice methane emissions by more than 60 percent.

Hilda Bassey, a chef in the mega city of Lagos, has captivated the country with her marathon cooking, which started on Thursday and ended on Monday night. The current longest cooking record is held by Indian chef Lata Tondon, who set a time of 87 hours and 45 minutes in 2019. Bassey's time will need to be certified by Guinness World Record officials before it can be made official.
