It was a stealth assault, the flattened boxes piling up as the deliveries of equipment, tools and other sundries for a research project flowed in. This small mountain of cardboard had done me the service of protecting expensive, precious deliveries, but it barely weighed anything and it’s just paper: flimsy and weak. Paper is something that we habitually underestimate. Members of the laboratory where I did my doctoral work at Cambridge had a favorite demonstration to impress audiences on open-house days.

As the midwinter gloom settles over the last dregs of the festive holidays, I’m finding that the cold and the darkness are offset by one compensating factor: It’s hot-chocolate season. I’m an unashamed enthusiast, particularly since I don’t drink much coffee or tea, and so I’ve spent a lot of time over the years stirring chocolate chips or powder into hot milk or water. You would think that the version with melted chips would easily be superior in every way, but even the cheapest chocolate powder has a little trick up its sleeve: the ability to tell you when the drink is ready just by the sound it makes.

The woman sitting next to me on a plane clicked her tongue at something on her phone, disapprovingly, and the sound took me right back to childhood. During horse-riding lessons, we had all been taught to click to encourage the horse on. No one ever explained why horses specifically were so receptive to this noise, while communication with cats, dogs and goats apparently worked just fine without it. I had barely thought about clicking since then, but it suddenly seemed strange that we can all click without too much thought or effort, because it’s so different from any other sound we make. So what is a tongue click?
