Two of his smokers open toward each other, creating what he calls a “heat alley,” in the middle of the room.
To mitigate the impact on his staff, he has them rotating in shifts of 10 to 15 minutes in the pit room.
“I grew up around heat my whole life,” he said, explaining that he got lightheaded at an outdoor event recently.
About two weeks ago, they had to close the restaurant for two days as temperatures in the kitchen reached 124 degrees.
Now, they’re paying about $1,200 a month for electricity, about 50 percent more than before the heat wave.
