It’s the shuddersome, floppy Greenland shark, which can live to 300, perhaps even longer, its life span slowed and distended by the deep cold of the northern oceans. Since then, measured by weight, 90 percent of the largest creatures sharing the oceans with them have disappeared. This is not just a parable about the warming of the seas. Ninety percent of global marine fish stocks have now been fully exploited or overfished; 81 percent of monitored migratory freshwater populations have declined since 1970. But the story of that warming is nevertheless astonishing, even for those of us anesthetized by exposure to the world’s rapid ecological transformation.

How Can Cardboard Be So Strong?
  + stars: | 2023-12-01 | by ( Helen Czerski | ) www.wsj.com   time to read: +1 min
Illustration: Tomasz WalentaA few weeks ago, my office was invaded by cardboard. It was a stealth assault, the flattened boxes piling up as the deliveries of equipment, tools and other sundries for a research project flowed in. This small mountain of cardboard had done me the service of protecting expensive, precious deliveries, but it barely weighed anything and it’s just paper: flimsy and weak. Paper is something that we habitually underestimate. Members of the laboratory where I did my doctoral work at Cambridge had a favorite demonstration to impress audiences on open-house days.

Why Bugs Buzz So Loudly in Our Ears

Physicist Helen Czerski explores the complex science behind familiar phenomena. The birdsong has stepped up a notch, it’s no longer dark when I leave work, and colorful flower buds are peeping out of London’s greenery. Accompanying this cheerful celebration, last week the first fly of the season buzzed in through the window and parked itself on top of a pile of books. Insects are important and I’m happy to share a bit of space with them, but they are astonishingly loud for their size. This one strutted about for a while and disturbed my reading every time it took off.
Why It’s So Hard to Slice Cheese

Physicist Helen Czerski explores the complex science behind familiar phenomena. In every kitchen, there’s a drawer that acts as a window to the owner’s soul, revealing their weaknesses, hopes and regrets. Exhibit A in a kitchen I visited recently was a cheese wire. It was residing sadly in a corner because, well, knives exist. But the physics of cheese is surprisingly complicated, and maybe a cheese wire really can earn its place in the kitchen.
The Stirring Sound of Hot Chocolate

Physicist Helen Czerski explores the complex science behind familiar phenomena. Read more columns here. As the midwinter gloom settles over the last dregs of the festive holidays, I’m finding that the cold and the darkness are offset by one compensating factor: It’s hot-chocolate season. I’m an unashamed enthusiast, particularly since I don’t drink much coffee or tea, and so I’ve spent a lot of time over the years stirring chocolate chips or powder into hot milk or water. You would think that the version with melted chips would easily be superior in every way, but even the cheapest chocolate powder has a little trick up its sleeve: the ability to tell you when the drink is ready just by the sound it makes.
How Clicking Tongues Get Their Power
  + stars: | 2022-09-24 | by ( Helen Czerski | ) www.wsj.com   time to read: 1 min
The woman sitting next to me on a plane clicked her tongue at something on her phone, disapprovingly, and the sound took me right back to childhood. During horse-riding lessons, we had all been taught to click to encourage the horse on. No one ever explained why horses specifically were so receptive to this noise, while communication with cats, dogs and goats apparently worked just fine without it. I had barely thought about clicking since then, but it suddenly seemed strange that we can all click without too much thought or effort, because it’s so different from any other sound we make. So what is a tongue click?
