CNN —A 70-year-old man was killed by a cow moose after he tried to take photos of the animal and its newborn calves near his home in southern Alaska on Sunday, authorities said. The man, Dale Chorman, was with a friend when the pair spotted a female moose and her two newborn calves in the city of Homer, the Alaska Department of Public Safety said. “Dale was with another adult male and they were attempting to take photos of two newborn moose calves when the cow moose attacked Dale,” agency spokesperson Austin McDaniel told CNN in an email Tuesday. While in the company of her calves, a female moose will not hesitate to attack should a person come near them, McDaniel said. “Cow moose with calves are known to be relentless in their efforts to defend their calves from perceived threats,” McDaniel said.

In 1918, an influenza virus jumped from birds to humans and killed an estimated 50 million to 100 million people in a world with less than a quarter of today’s population. For years it has been devastating bird populations worldwide and more recently has begun infecting mammals, including cattle, a transmission never seen before. In another first, the virus almost certainly jumped recently from a cow to at least one human — fortunately, a mild case. As they do, they must be cautious about the lessons they might think Covid-19 left behind. Two assumptions based on our Covid experience would be especially dangerous and could cause tremendous damage, even if policymakers realized their mistake and adjusted quickly.

I took a fantastic drive the other day across the top of Connecticut, from Simsbury over to Kingston, N.Y., through old tobacco fields and cow pastures and apple orchards and into the Hudson Valley under a bluebird sky. Slow-roasted salmon with salsa verde? I settled on artichoke carbonara (above), with bucatini and a garnish of raw egg yolk, to almost literally gild the lily. I drove over the bridge from Rhinecliff in afternoon sunlight and could almost see the dish glimmering below me on the river. I like it on any Sunday, but if you’re in need of a fantastic Mother’s Day meal, it’d be extra nice this evening.

I stopped shopping at Whole Foods in 2012, but recently went back to see if anything had changed. I eventually realized that other supermarkets better supported my shopping habits and lifestyle, and I stopped going to Whole Foods in 2012. Now, I can easily visit Wegmans for plant-based foods and shop at Safeway for milk alternatives or locally-produced ice cream, so Whole Foods no longer stands out. Meat from dairy cows, rarely valued in American kitchens and restaurants, usually becomes dog food and fast-food burgers. But a few farms, including Mindful Meat in Marin County, Calif., and Butter Meat Company in Pavilion, N.Y., just west of the Finger Lakes, have been selling meat from culled dairy cows and convincing skeptics. At Stone Barns, dairy cattle are living out their golden years munching on Pocantico Hills grass before becoming the highlight of a tasting menu that can run more than $400 per person. All the beef dishes at the restaurant are made with culled dairy meat; at the Stone Barns store, frozen strip-loin steaks are $24 a pound.

CNN —Close flybys of Io, one of Jupiter’s moons and the most volcanically active world in our solar system, have revealed a lava lake and a towering feature called “Steeple Mountain” on the moon’s alien surface. “We also got some great close-ups and other data on a 200-kilometer-long (127-mile-long) lava lake called Loki Patera. CNN —The bird flu spreading through cattle in the United States is an “enormous concern” the chief scientist of the World Health Organization said Thursday as he called for more tracking and preparation for the virus. So far, there is no evidence that the highly pathogenic H5N1 flu virus can spread from person to person. Though H5N1 doesn’t spread from person to person, humans can catch it when they’re exposed to infected animals. They are only the second documented case of human H5N1 in the United States. The US Centers for Disease Control and Prevention says that while the current risk to public health from H5N1 is low, it is monitoring the situation carefully.

Well, so far US officials are saying they believe there is minimal risk to the public from the latest iteration of bird flu. According to the Global Health Security Index, there are significant gaps in countries’ pandemic preparedness capabilities. Given the impact of Covid, it is deeply disappointing that national governments are not investing the necessary resources to build life-saving pandemic preparedness capacity. Making matters worse, Congress has made major cuts to pandemic preparedness funding, as part of the ongoing appropriations process. Playing the long game also means supporting the World Bank Pandemic Fund, which is designed to invest in long-term pandemic preparedness capacity of low- and middle-income countries.
