A Hearty Irish Bread Absolutely Anyone Can Make

The first time I had brown bread from Ballymaloe Cookery School in Cork, Ireland, was at a welcome lunch for students. The menu was simple: Loaves of the bread accompanied poached Poole prawns from Ballycotton Bay, a 15-minute walk from the farm where the school sits. Darina Allen, the school’s co-founder, buzzed around the room, encouraging us to spread thick slices of the bread with mayonnaise or butter, and pile on the tiny prawns. The quiet luxury of all of it was heady, but it was the plain brown loaf — nutty, barely sweet and still warm — that felt most special.

I was a baking-and-pastry devotee and did not yet have the experience of working among ornery savory chefs with their own idols and heroes. Ms. Lewis was as savory a chef as I had studied at that point, but I mostly focused on her pies, cakes and breads. Back then, I regretted when savory chefs commandeered the dessert menu. This is the trademark of pastry chefs of my generation. We have been brought up in both worlds, learning the rules and then adjusting to our moment and materials, as savory chefs do.

No one’s goose gets cooked during “ Mary Berry ’s Ultimate Christmas” and why is that? But geese are actually greasy, relatively meatless and too busy polluting public parks to make an appearance on TV. Besides, their absence is reassuring: The English may have given us our traditional Christmas celebration. And that’s what the merry Ms. Berry makes the main attraction of the elaborate meal she prepares—and more importantly plans for—in this hourlong tutorial on the art of the holiday. The music is a bit insistent about creating a mood, but Ms. Berry’s enthusiasm is real and never wavers.
There’s a word that people use to describe men who get sloppy drunk, grope women, bully their subordinates and, when they issue a letter of public apology, include a recipe for cinnamon rolls. The word, unprintable, comes to mind several times during “Batali: The Fall of a Superstar Chef.”But Mario Batali , ex-celebrity chef and onetime evangelist for refined Italian cookery, is not a criminal—not according to the New York City Police Department, which dropped an investigation into sexual-assault accusations. Or a judge in Boston, who found him not guilty of similar charges. He is and will remain—especially after this documentary—a disgraced restaurateur-raconteur and alleged sexual harasser who will give viewers a bad taste in their mouths. The film might, too.
